Tomato and Balsamic Vinegar Sauce
This is a great sauce, or maybe more accurately a great condiment, for a grilled chicken breast.
- 2 grilled chicken breasts
- 1 roma tomato
- 1/2 tablespoon balsamic vinegar
- 1 tablespoon extra virgin olive oil
- 5 or 6 basil leaves shredded
- kosher salt and freshly ground black pepper
Dice the tomatoes into ¼ inch chunks. Add the balsamic vinegar, the olive oil, the basil, a pinch of salt and a couple of turns of the pepper mill. Set aside the sauce and allow to macerate for at least 20 minutes, an hour would be better.
Cut the chicken breasts into segments and spoon the sauce over the top.
