Soy/Ginger Sauce for Grilled Chicken
This is a great sauce, or maybe more accurately a great condiment, for a grilled chicken breast.
- 4 grilled chicken breasts
- 1 medium carrot, small dice
- 1 celery stalk, small dice
- 1/2 medium red onion, small dice
- 2 tablespoons diced ginger root
- 2 tablespoons chopped cilantro
- 2 tablespoons olive oil
- 1/4 cup soy sauce
- 1/4 dry white wine
- 1/4 cup chicken stock
- kosher salt, and black pepper
Add the olive oil to a sauté pan and heat over medium high heat. Add the carrot, celery, onion, and ginger root and sauté for about 5 minutes. Add the cilantro, the soy sauce, the chicken stock, and the white wine. Simmer until the sauce reduces by half.
Cut the chicken breasts into segments and spoon the sauce over the top.
