Sour Cream and Dill Cucumber Salad

Sour Cream and Dill Cucumbers
I like the cucumbers for this salad to be cut extra thin. It would be helpful if you could use a mandolin or the slicer setting on your food processor. However you make it this is a very mild, cool salad perfect for serving with some grilled fish or chicken.
- 2 large cucumbers cut in very thin slices
- 1/2 red onion cut in very thin slices
- 1/2 cup sour cream
- 3 tablespoons white vinegar
- 2 tablespoons chopped fresh dill
- kosher salt and freshly ground black pepper
Add the cucumbers and the onion to a large bowl. In a separate smaller bowl combine the other ingredients. Using a whisk combine the mixture until it is a smooth creamy sauce. Add the sauce to the cucumbers and toss coating all the pieces in the bowl. Cover and place in the refrigerator for an hour or so to let the cucumbers macerate a bit.
