Quinoa, Basic

Quinoa is cooked much like rice although the proportions of liquid to grain are a bit different. If you want to keep this completely vegetarian or vegan use water or a vegetable or garlic broth for cooking.

  • 1 cup quinoa, thoroughly rinsed
  • 1 1/2 cups water, chicken stock or vegetable stock
  • 1/2 teaspoon kosher salt (optional)
  • 1 tablespoon olive oil (optional)

In a covered sauce pan heat the liquid, salt and olive oil over medium high heat until it boils.  Add the rinsed quinoa, bring to the boil again, reduce the heat and simmer for 15 minutes.  Remove the pan from the heat and let rest for 5 minutes.  Fluff the quinoa with a fork to separate the grains and serve.
