Penne Pasta with Grilled Sausage and Broccoli
This was an invention of necessity. I had a few ingredients on hand. I was too lazy to run to the store. The result is a vey nice dish of improbable ingredients. If you can time the grilling correctly with cooking the pasta you can have it on the table in about 30 minutes.
1/2 pound penne pasta
2 hot italian sausage, or other sausage to your liking
1 broccoli crown cut into spears
2 cups kale, spinach or other bitter green
1/2 cup chopped onion
1/4 cup lemon juice, plus 1 tablespoon
1/4 cup white wine
1/2 cup chicken stock
6 to 8 whole basil leaves
extra virgin olive oil
2 oz grated parmigiano reggiano
kosher salt and freshly ground black pepper
Set a large pot of salted water to boil.
Set a gas grill to medium high and preheat for about 5 minutes. Meanwhile in a large bowl add the broccoli spears with 1 tablespoon olive oil and 1 tablespoon of lemon juice. Toss to coat. Grill the sausage until cooked through with nice grill marks, about 3 to 5 minutes per side. Remove the sausage. Place in a small baking dish and cover with foil. Place the broccoli spears on the grill. Cook until one side starts to smoke a bit, about 3 minutes, turn and cook on the other side for about 3 minutes. The broccoli should have char marks on it. Remove the broccoli and place on a plate uncovered.
Add the penne to the boiling water. Cook according to package directions.
Meanwhile in a large saute pan heat 2 tablespoons of olive oil over medium high heat. Once heated add the onion and cook for about 5 minutes. Slice the sausage into 1/2 inch rounds. Add the sausage, the basil and the kale to the pan. Add all the liquids. Simmer the mixture to reduce the liquids about 5 minutes.
Drain the pasta and add it to the pan with the broccoli. Toss the pasta and broccoli with the sauce to heat through. About 2 minutes.
Divide the pasts into two serving bowls. Drizzle with a bit of olive oil and top with the cheese.
