Orzo Pasta Salad

aorzosal 300x247 Orzo Pasta SaladWhen the weather gets warmer I like to fix a variety of pasta salads. This one is very simple. Use your imagination for adding ingredients. All you need is some vinaigrette and you are set to go.

  • 1 cup orzo pasta
  • 1 recipe vinaigrette or your own vinaigrette, about 1/2 cup in all
  • 2 roma tomatoes in large dice
  • 1 red bell pepper in large dice
  • 1 cucumber, peeled and seeds removed, large dice
  • 1/2 cup diced red onion
  • 3 oz feta cheese crumbled
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • kosher salt and freshly ground black pepper

In a large pot add water and salt and heat to the boiling. Add the orzo and cook according to package directions. Drain the orzo in a wire mesh sieve. A regular colander will cause you to loose most of the orzo if you are not careful. Rinse the orzo under cold water to stop the cooking process.

Add the diced vegetables and the crumbled feta. Mix thoroughly. Add the vinaigrette dressing. Mix thoroughly. Adjust for salt and pepper and serve.

The recipe should make about four side dish servings.

Other Ideas

You can turn this into an entrée if you add a little tuna or cooked shredded chicken. It makes a great one dish meal.
