Italian Sausage with Sautéed Mixed Greens
Once again the simplest dishes seem to work out the best. Grilled sausage is mixed with a variety of greens and sautéed together creating a very earthy tasting dish. If you pair it with polenta its sweetness will contrast nicely with the sausage mixture.
- 4 hot italian sausages, or use sweet if you do not like the heat
- 4 cups mixed greens, spinach, arugula, chard, sorrel, mustard greens etc.
- 1/2 medium red onion cut into thin half moons
- 1 clove garlic thinly sliced
- 2 tablespoons of olive oil
- kosher salt and black pepper
Grill the sausage until cooked through. You could bake the sausage or sear the sausage in a pan but I think the grill marks add a lot of depth to the ultimate flavor. Cut into one inch pieces and set aside.
Add the olive oil to a large sauté pan over medium high heat. Once heated through add the onion and sauté until wilted about 5 minutes. Add the garlic and heat until fragrant about 30 seconds. Add the mixed greens and sauté until completely wilted, about 3 to 4 minutes. Add the cut sausage to the pan, toss with the greens, and allow to reheat for a minute or two. Serve immediately. This will make two very large portions.
