Grilled Chicken with Apple Salsa

This is a very simple grilled chicken breast with a very flavorful sweet and savory salsa. The recipe calls for a mildly spicy pepper. I used a spanish spice pepper, which is a spicy banana pepper. I think you could even go with a jalapeno or serrano to create an even more interesting contrast. The heat is up to you.

Salsa

1 golden delicious apple, cored and diced small
1/2 small red onion, diced, about 1/4 cup
1 mildly spicy pepper, cut into small dice
2 tablespoons chopped fresh cilantro
juice from one lime
kosher salt and freshly ground black pepper

Place all the chopped ingredients into a bowl. Toss to mix thoroughly. Add the lime juice, a pinch of salt, and a pinch of black pepper. Toss the mixture again making sure all the ingredients are covered with the lime juice. Cover and set aside in the refrigerator. You can make this ahead and store it for a couple of days.

Chicken Marinade

1/4 apple cider
1/4 cup dry white wine
zest from one lime, chopped
2 tablespoons olive oil
1 tablespoon honey
kosher salt and freshly ground black pepper

Add all ingredients to a large bowl and whisk until thoroughly blended. Submerge the chicken breasts in the mixture and marinate for at least 40 minutes. You can use this for 4 small chicken breasts or 2 to 3 large chicken breasts.

Heat a grill to medium high heat. Grill the chicken to a temperature of 165 degrees making sure to get some good grill marks. Place the chicken in a small baking dish and cover with foil. Allow the breasts to rest for at least 10 minutes.

Serve the breasts top with a large spoonful of the apple salsa.
