Greek Style Tomato Salad

This is akin to the Italian caprese salad, except the ingredients are slightly more numerous and feta cheese replaces the mozzarella.

2 large very ripe tomatoes
1 large cucumber, peeled and seeded
1/2 red onion
1 tablespoon capers
3 oz feta cheese, crumbled
2 tablespoons whole fresh oregano leaves
2 tablespoons extra virgin olive oil
2 tablespoons lemon juice
kosher salt and freshly ground black pepper

Cut the tomatoes into 1/4 inch round slices. Arrange overlapping on a serving plate.

Cut the cucumber and the onion into very thin slices. A mandolin would be helpful for this purpose.

Arrange a few pieces of cucumber and one piece of onion between each slice of tomato. Evenly top with the feta cheese, the capers, and the oregano.

Drizzle on the extra virgin olive oil and the lemon juice. Serve immediately.
