Caprese Salad
One of the easiest of salads that fall under composed salads. If you can slice a tomato you can make this salad.
2 large very ripe tomatoes
10 to 12 fresh basil leaves
6 oz fresh mozzarella
2 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil
kosher salt and freshly ground black pepper
Cut tomatoes in 1/4 inch slices. Arrange on a serving dish overlapping the slices. Slice the mozzarella into equivalent pieces to the number of tomato slices. Between the tomato slices add one basil leaf and one slice of the mozzarella. Drizzle with the balsamic vinegar and the olive oil. Sprinkle with a bit of salt and a good grind of black pepper. Serve immediately.
