Baked Tilapia

I grew up in New England where the process of baking fish included a lot of butter. Nothing wrong with butter. This is a healthier alternative.

4 tilapia fillets, about 4 oz each
1 very ripe tomato, cut into large dice
8 olives, cut into quarters
2 tablespoons capers
4 sprigs of fresh dill
1 tablespoon finely chopped fresh mint
olive oil, for drizzling
kosher salt and freshly ground black pepper

Preheat the oven to 350 degrees.

Place the tilapia fillets on a baking sheet. Top evenly with the tomatoes, olives, and capers. Disperse the fresh mint evenly over the four fillets. Put one sprig of dill on the top of each fillet. Drizzle the fish with a bit of olive oil. Sprinkle with a bit of salt and pepper to taste.

Place the fish in the oven for about 15 minutes.
