Apple Upside-Down Cake
This is a simple, straight forward cake with gooey brown sugar and apple goodness oozing over the top. You could substitute just about any other type of berry or fruit if the apples are not in season.
1 stick unsalted butter
1 cup brown sugar
3 apples, peeled, cored 2 of them cut into 16th’s and 1 cut into a medium dice
1/4 cup walnuts, chopped
1 1/2 cups granulated sugar
1 3/4 cups flour
3 large eggs
1 teaspoon baking powder
1/2 cup apple cider
1 teaspoon vanilla.
Preheat the oven to 350 degrees.
In a mixing bowl combine sugar, flower, and baking powder. Stir to thoroughly mix.
In a separate bowl combine eggs, apple cider, and vanilla. Whisk to mix thoroughly. Using a spatula add the dry ingredients to the wet ingredients and fold the mixture to combine thoroughly. Add the diced apple and the walnuts and fold again to disperse throughout the mixture.
In a small sauce pan melt the butter over medium heat. Add the brown sugar and whisk to combine.
Pour the butter and sugar mixture into the bottom of a large 10 inch saute pan or cast iron skillet. Arrange the apple slices in a fan pattern on top of the mixture. Pour in the cake batter.
Bake for 35 to 40 minutes or until a toothpick inserted in the cake comes out clean. Allow the cake to cool in the pan for about 20 minutes. The cake can then be inverted onto a plate or cake stand for serving.
